Kale is one of those under utilized greens that we often bypass in the grocery aisles.
Kale is actually a “superfood” that you should consider adding to your diet on a regular basis.
Kale is high in: calcium and iron. It is filled with Vitamin K, Vitamin C and Vitamin A. It has a healthy amount of fiber and antioxidants. And according to TCM (Traditional Chinese Medicine) it helps detoxify your Liver.
Here is a great all year round salad that is sure to become a favorite.
Lemony Kale Salad
1 large bunch fresh kale
1 medium orange peeled
1/3 cup toasted pumpkin seeds (you can also use sunflower seeds)
1 tbsp maple syrup (to taste)
3 tbsp olive oil
juice from one lemon
sea salt and fresh ground pepper to taste
Wash and dry kale leaves, removing tough stalks. Stack the leaves and cut into thin slices.
In salad bowl, drizzle the kale slices with olive oil, lemon juice and about 1/2 tsp salt. Mix the dressing into the leaves and let stand till leaves slightly wilt. You can then cover and put into the fridge for up to two days.
Before serving: Peel orange and remove white pith and seeds. Cut into thin slices or small wedges and add to salad. Drizzle with maple syrup, add fresh ground pepper and a bit more salt and toss until evenly covered. Sprinkle with pumpkin seeds and serve.
